A Gluten & Sugar free Tart, that will satisfy your sweet tooth, that is still very wholesome
APPLE CUSTARD CRUMBLE
Ingredients
For the apple custard:
Apples, cored and thinly sliced—enough to cover the base of your baking dish
20 g melted butter or coconut oil or Olive oil
60 g honey
2 whole eggs
2 egg yolks
1 1/2 cup milk (can use dairy free milk )
1/2 cup tapioca starch
1 tsp cinnamon powder
Vanilla essence, optional
A handful of raisins
For the crumble:
35 g almond flour
30 g desiccated coconut
30 g chopped cashews
30 g butter, softened
Method
Preheat the oven to 180°C. Lightly grease a baking dish and arrange the sliced apples over the base.
Whisk the tapioca starch with a little of the milk until smooth. Add the remaining milk, melted butter, honey, whole eggs, egg yolks and optional vanilla. Whisk until well combined.
Pour the mixture over the apples and sprinkle with raisins.
Bake for 30 minutes.
Meanwhile, combine the almond flour, coconut and chopped cashews. Rub in the softened butter until the mixture forms coarse crumbs.
Remove the dish from the oven and sprinkle the crumble evenly over the apple custard.
Return to the oven for approximately 15–20 minutes, until the topping is golden, the apples are tender and the custard is set. If the topping browns too quickly, cover loosely with foil.
Allow to rest for 10–15 minutes before serving warm.
The tapioca starch gives this a firmer, sliceable texture rather than a soft, runny custard.
