Oats Bars with Berry Filling

Crust and Crumb
– 1 1/4 Cups Oat flour
– 1 1/4 Cups Rolled Oats
– 1/2 Cup melted Coconut oil
– 1/4 Cup Peanut butter
– 1/4 Cup Honey
– 1 tsp Vanilla
– 1/4 tsp Salt
– 1/4 tsp Baking Soda

Jam filling
– 2 1/2 Cups Berries
– 1 Tbsp Cornstarch
– 2 Tbsp Lemon Juice
– 1 Tsp Gelatine powder

Steps
1. Preheat oven on 180°C
2. Combine all the crust ingredients
3. Place 1/2 of crust mix in baking tray, bake for 10min until brown.
4. While crust is cooling, add the jam ingredients to a saucepan on medium heat.
5. Mash the berries and let the jam simmer until it thickens.
6. Pour the jam on the crust and layer the other half of the crumb on top
7. Bake for 20mins until the crumb is light brown.
8. Only cut into the bars after it’s completely cooled down.
