Protein Bar (Coconut, Nuts & Seeds)

Gluten free / Sugar free / Low Carb

HOME MADE PROTEIN BAR 

DRY INGREDIENTS

  • 1/2 cup oat flour
  • ½ cup sunflower seed flour
  • 1/2 cup desiccated coconut
  • 80g protein powder (unsweetened)
  • 2 tbsp hemp seed powder (optional)
  • 2 tbsp raw cacao powder
  • 1/4 cup pumpkin seeds

WET INGREDIENTS

  • 100g soft dates (soaked in warm water, then smashed)
  • 30ml Coconut oil
  • 1 heaped tablespoon honey (adjust for sweetness)
  • 1/3 cup Peanut butter or any other Nut Butter
  • medium size banana

🍫 Instructions

1. Soften the dates

  • Place dates in boiling water & cook for 5 min, with closed lid
  • Drain and mash into a paste

2. Mix ingredients

In a large bowl combine all the dry ingredients with the wet ingredients

3. Press & set

  • Press mixture firmly into a lined tray or container
  • Smooth the top tightly (important for binding)

4. Chill

  • Refrigerate for 2–3 hours until firm
  • Cut into bars or squares
