A moist, lightly sweetened delicious wholesome muffin.
INGREDIENTS
Liquids:
- 2 eggs
- 1 cup buttermilk or yoghurt
- 1/4 cup Macadamia nut or Olive Oil
- 1/2 cup mashed Banana
- Optional:Â 5 ml vanilla liquid
Dry Ingredients:
- 1 1/2 cups Stoneground Wheat OR Spelt Flour
- 3/4 cup Oats Flour OR Buckwheat OR Nut Flour
- 1/2 cup Coconut sugar
- 2 tsp Baking powder
- pinch of salt
1/2 cup Blueberries
METHOD)
Pre-heat the oven @ 180 degrees
Beat the eggs until light, then add rest of liquids & mix together
Add the dry ingredients, by gently folding it into the liquids. Once combined, add the Blueberries
Bake for 40 to 45min, depending on the size of your muffin pan
