DAIRY FREE / GLUTEN FREE / SUGAR FREE
Crispy Chocolate Coconut Cookies, sweetened with only dates & honey
Ingredients
- 1/2 heap cup dates, pits removed + 1/4 cup water
- 1/4 cup Honey
- 1/2 cup virgin coconut oil OR 125g Butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup cocoa powder
- 1Â cup Stoneground White Cake flour OR Spelt Flour
- 1/2 cup roughly chopped dark chocolate or Nuts
HOW TO PREPARE)
Bring dates to boil with water, with a covered lid. Put off heat and let sit for 5 min to soften & cool
Add Butter / Coconut oil & honey to the dates & mix well, flattening the dates with a fork
Beat the egg, and once foamy & light, add the date mixture + vanilla
Fold in the dry ingredients , until mixed well
Roll into balls & flatten on a greased tray
Bake for 10 to 15 min @ 150 degrees, until brown
