Low Carb Banana Choc Date Muffin

DAIRY FREE / GLUTEN FREE / SUGAR FREE

A wholesome muffin, that contain Almonds, that is Low carbs, with the goodness & high fiber content of dates & bananas. 

BANANA DATE ALMOND MUFFIN

INGREDIENTS:

  • 3 eggs
  • 100g Dates + 1/4 cup water
  • 1/4 cup Coconut oil OR Macadamia nut oil
  • 3/4 cup crushed Banana (2 medium)
  • 2 cup Almond OR Macadamia nut flour
  • 1 tsp baking powder
  • pinch of salt
  • 1 cup Desiccated coconut
  • 1/4 cup Cocoa powder
  • Optional:  1/4 cup Choc chips

TO PREPARE

Step 1:  Bring the dates & water to boil, with covered lid.  Remove from heat and crush dates with fork.  Leave with lid to cool

Sep 2:  Beat the eggs until light & creamy.  Mix in liquids & dates to eggs

Step 3: Sift the cocoa into the eggs mixture & blend

Step 4:  Fold in rest of dried ingredients. Don’t overmix

Step 5:  Bake for 20 to 25 min at a pre-heated oven @ 180 degrees
