A delicious comforting, easy to make Stew recipe..
LAMB CURRY STEW
Servings 4 – 6
Ingredients:
- +- 500g Lamb stew meat
- 1 tablespoon olive , macadamia OR coconut oil
- 2 heaped teaspoons Pure Spice Curry All in 1 (This mix include coarse coriander and all spices needed for a lovely stew 🙂
- 1 teaspoon Tomato paste
- 2 tomatoes, diced
- dash of Lemon juice OR balsamic
- Apricot jam (optional) OR handful of raisins
- 2 medium onions
- 2 garlic gloves
- 1/2 to 1 tsp himalayan salt
- Pepper to taste
- small fresh chillie & fresh grated ginger (optional)
- 4 medium carrots, cut in small pieces
- 5 to 6 medium potatoes, cut in small chunks
- 1 tablespoon flour (wheat flour, buckwheat, tapioca or all purpose gluten free)Â + 1/4 cup water – stir in paste
- around 250g green beans
- parsley / coriander leaves (optional)
Step 1)Â Brown the meat in oil in a big pot. Once brown, remove from pot & set aside
Step 2) Saute onions & Garlic, add more oil if needed. Once soften, add the spices, tomatoes, paste & lemon / balsamic.
Step 3)Â Add the meat back into the pot. Add 1/3 cup boiling water and simmer for 1 hour with closed lid
Step 4)Â After an hour’s cooking, add the carrots & potatoes & cook a further 2 hours, or if you use a slow cooker, a further 2 1/2 to 3 hours.
Step 5)Â Once the meat & veggies is soften to your taste, add the cut green beans, and flour water mix & stir well.
Step 6)Â Let it simmer for around 10 min, for stew to thicken & green beans to soften
Season with herbs, salt & pepper to taste & Enjoy :0)
