This is a delicious Moist Muffin that is full of nutrition, that your body will love.
Wet Ingredients
- 2 Eggs
- 5ml vanilla Essence or powder
- 60g scoop Honey
- 60g scoop Macadamia nut, Olive oil or Coconut oil
- 1 cup (140g) Dates
- 3/4 cup Boiling water
- 2 mashed Bananas (180g) with 2 tablespoon lemon juice
Dry Ingredients:
- 1 1/2 cups (240g) Oats Flour
- 1 cup (160g) Almond or Macadamia Nut flour
- 1 teaspoon Baking powder
- 1/2 teaspoon Bicarbonate soda
- 1/2 cup Almond flakes, Desiccated Coconut or Sesame seeds
- 1 tablespoon Chia seeds (optional)
- 60g scoop sunflower seeds
How to Prepare:
- Put dates with boiling water in small pot and cook for 5 minutes or until its boiling, with closed lid
- Put the oven onto 180 degrees
- Mash the banana and mix in Lemon juice – then put aside
- Weight off all the dry ingredients
- In big bowl separate bowl, beat the Eggs until light in color, then add the rest of the wet ingredients, including the Dates, a little bit at a time.
- Mix the Dry Ingredients with the Wet ingredients, until well combined but don’t over mix
- Pour mixture into cupcake holders & Bake for 35 minutes.
