DAIRY FREE / GLUTEN FREE OPTION
Lightly sweetened with Honey & Coconut Sugar. The Chickpea flour & Peanut butter, offer it a higher protein than most cookies
PEANUT BUTTER COOKIES Recipe:
Wet Ingredients:
- 80g Butter OR Coconut Oil or Macadamia nut Oil
- 1/2 Cup Peanut butter, (Sugar free)
- 60g Honey
- 80g Coconut sugar OR Brown Sugar OR Xylitol
- 1 Large egg
- Vanilla extract (optional)
Dry Ingredients:
- 1/4 cup Tapioca OR Potato Starch OR Corn Starch
- 3/4 cup Chickpea flour OR Buckwheat Flour
- 3/4 cup Stoneground Flour (can replace this also with Gluten free flour)
- 3/4 teaspoon Bicarbonate Soda
- pinch of Himalayan OR Sea salt
- 1/4 teaspoon Cinnamon (optional)
Melt the Butter / Coconut oil and then add the rest of the liquids. Mix the dry ingredients to the wet ingredients until well combined. Roll into small balls and place on a greased baking tray / Dish. Flatten with a fork
Bake for around 15 min @ 150 degrees, until golden brown. If need be, depending on your oven, you can turn the Cookies over, to ensure even baking.
