Ingredients: Sea Salt, Coriander, Cumin, Paprika, Turmeric, Garlic, Ginger, Mustard, Cayenne Pepper, Chillies, Fennel, Fenugreek
EASY CURRY RECIPE
- 2 tablespoon Oil (try Macadamia Nut oil)
- 1 onion sliced
- 2 cloves of garlic, crushed and chopped
- 500g Stew Lamb or Chicken
- 3 chopped Carrots
- 4 medium size Potatoes peeled and chopped
- 1 tablespoon Lemon or Red Wine Vinegar
- 1/4 cup Dried Apricots or Peaches, finely chopped
- 1/4 tsp Sea or Himalayan Salt
- pinch Black Pepper
- 2 to 3 fresh tomatoes (optional)
- Bay leaves
- Boiling Water OR Coconut cream (Optional:Â this is great with Chicken)
- 2 teaspoons Pure Spice Curry Hot Spice
- 1 teaspoon Pure Spice Garam Masala spice
- 1 teaspoon Coconut Sugar or 1/2 teaspoon Honey (optional)
- 1 tablespoon flour (tapioca starch, spelt flour or rice flour)
Directions
- Generously salt and pepper the meat cubes.
- Brown meat over medium/high heat in 1 Tbs of oil (about 3 minutes).
- Remove meat from pan and lower heat to medium.
- Add 1 Tbs of oil to pan and add onions and cook at medium until soft.
- Add garlic, carrots and potatoes and all the spices and sugar/honey.
- Stir pan so everything is coated with spice mixture and cook for 3 minutes.
- Add the meat, tomatoes and flour and mix well.
- Add 1/4 cup boiling water OR Coconut Cream, lemon juice or vinegar and dried fruit
- Mix thoroughly, then cover with lid and simmer for 2 hours or cook for around 40 minutes in pressure cooker.
- Garnish with Coriander, slivered Almonds and serve with Yogurt if you’d like. Enjoy! 🙂
