Bulgar Wheat Pesto Salad

This is a wonderful side dish to meat, that is easy to make, full of fresh delicious ingredients.

INGREDIENTS:

  • 1 cup Bulgar wheat OR Couscous
  • 1/2 tsp himalayan or sea salt
  • 2 cups of water
  • 1/4 cup Sundried Tomato, cut in small pieces
  • 1/3 cup Green Pesto
  • 1 tablespoon olive oil
  • handful Dark olives, cut in half
  • Feta, as per choice
  • broken Walnuts or Cashew nuts or seeds (optional)

HOW TO PREPARE:

  • Place bulgur, water, and salt into a medium-size saucepan over medium heat.  Give it a stir.
  • Bring it to a boil, put the lid on, turn down the heat to low and cook until the liquid is absorbed, should be around 12 minutes, for coarse bulgur
  • Add all other ingredients & mix well.
  • Can serve hot or cold
