A Rich Moist Brownie, that is lightly sweetened with Coconut sugar, and contains a Peanut butter topping
Ingredients:Â
- 100g unsalted butter OR Coconut oil
- 3/4 cup Coconut Sugar OR Brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup Stoneground Flour OR Spelt Flour
- 1/3 cup cocoa powder
- 1/4 teaspoon salt
TOPPING
- heaped 1/3 cup OR 1/2 cup Peanut butter, unsweetened
- 1 heaped tablespoon honey
- 2 tablespoon Butter or Coconut oil
Instructions:
- Preheat your oven: Preheat the oven to 180°C. Grease a small dish, around 20x20cm.
- Melt the butter or Coconut oil until completely liquid, then stir in the sugar.
- Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
- Combine dry ingredients: In a separate bowl, sift together the flour, cocoa powder and salt
- Mix wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out with moist crumbs, but not wet batter.
- Allow the brownies to cool in the pan for about 10 minutes, while preparing the topping
- Heat the Topping ingredients in a pan, simmer for few minutes, until it just bubbling. Then pour over the brownie
