Peanut Butter Brownie Recipe

A Rich Moist Brownie, that is lightly sweetened with Coconut sugar, and contains a Peanut butter topping


  • 100g unsalted butter OR Coconut oil
  • 3/4 cup Coconut Sugar OR Brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Stoneground Flour OR Spelt Flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt


  • heaped 1/3 cup OR 1/2 cup Peanut butter, unsweetened
  • 1 heaped tablespoon honey
  • 2 tablespoon Butter or Coconut oil


  1. Preheat your oven: Preheat the oven to 180°C. Grease a small dish, around 20x20cm.
  2. Melt the butter or Coconut oil until completely liquid, then stir in the sugar.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  4. Combine dry ingredients: In a separate bowl, sift together the flour, cocoa powder and salt
  5. Mix wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out with moist crumbs, but not wet batter.
  7. Allow the brownies to cool in the pan for about 10 minutes, while preparing the topping
  8. Heat the Topping ingredients in a pan, simmer for few minutes, until it just bubbling.  Then pour over the brownie
