A Delicious refreshing salad, that is full of Antioxidants, Fiber & Omega 3.
RECIPE INGREDIENTS:
- 1/2 small red cabbage, finely diced
- 1 small beetroot, grated
- 1 big carrot, grated
- 1/4 of a big OR 1/2 of a small pineapple, cut very small
- 1 green apple, grated (optional)
- 2 tablespoons mixed seeds / flax / pumpkin / sesame seeds
- Cashew nuts, Coriander leaves, for decoration (optional)
- Piece of salmon
SAUCE INGREDIENTS:
- 2 tablespoons apple cider vinegar
- 2 tablespoons Lemon Juice
- 3 to 4 tablespoons Olive oil
- 1/2 teaspoon fine Himalayan salt
- pinch of black OR cayenne pepper
- 1/2 tsp grated Ginger (optional)
TO PREPARE
Cut up all ingredients & mix together in a bowl. Blend all sauce ingredients & mix in with salad.
For an Omega 3 rich meal, serve with grilled Salmon, alternatively, this salad will be delicious with a steak or Chicken breast :0)
