A Delicious Gluten free Vegan Stew, that is high in Fiber and contain No Additives! |
TOMATO & RED PEPPER BEAN STEW |
Serve: 4 to 5 people |
Ingredients: |
1 cup dried Sugar beans, Red Kidney beans OR Cannellini beans |
1 tablespoon Olive oil, Coconut oil OR Macadamia nut oil |
1 big red pepper |
1 big onion |
3 cloves garlic |
1/4 celery stalk |
dash of white or red wine (optional) |
2 medium sized Carrots, finely chopped |
1 can tomato or 5 fresh ripe tomato’s |
1 small tomato paste |
1 teaspoon Paprika |
1/4 teaspoon Cayenne pepper |
1 teaspoon coarse coriander |
1/2 teaspoon cumin |
1/2 teaspoon sumac |
1/2 teaspoon himalayan salt |
black pepper to taste |
hand full basil leaves or parsley |
1 heaped teaspoon Brown rice flour OR Tapioca starch |
TO PREPARE: |
Soak the beans for at least 8 hours. |
Cook for 45 minutes in water. Once cooked, drain the beans. |
Simmer the onions & garlic until soft. |
Add the Red Pepper, Celery & spices and cook for further 5 minutes |
Add wine to the onion spice mix and cook over high heat for 1 minute. |
Add the tomato, paste, carrots & Beans. |
Cook with closed lid for 15 minutes |
Mix the flour with a little bit of water, into a paste. Add to the stew & stir well. |
Cook for a further 10 minutes, with closed lid |
Serve with Fresh herbs. |
